Matured by our master blender in a combination of ex-bourbon barrels and casks seasoned with the finest Oloroso sherry, cream sherry and ruby port to elevate Redbreast’s Single Pot Still Whiskey to new heights. By drawing inspiration from the aged inventory at Midleton Distillery, while also embracing a diverse array of cask types to introduce to the Redbreast range, we were able to nurture a Redbreast expression like no other.

Malted and unmalted barley is triple distilled for a rich, unmistakable silkiness with distinctive pot still spiciness. This Five Oak Cask Release is matured in a combination of three different types of virgin oak (Irish, European and American), in addition to ex-bourbon and ex-sherry casks. The finished result is a whiskey that is equal parts complex and smooth.
Red Spot Single Pot Still Irish Whiskey has matured for over 15 years in a combination of American Bourbon casks, Spanish sherry butts and Sicilian Marsala wine casks, all contributing in rich and complex flavours, making it the top spot in the range.
Nose
Pot Still spices with rich cooked fruit, baked apple, mango and black cherry. Hazelnut and a touch of new leather fuse with toasted American Oak.
Taste
A mix of ripe fruit sweetness from the Marsala seasoned wine casks. While the fruit remains, sweet red pepper and cracked black pepper add some spiciness, finished by notes of American Oak and barley.

The 16 year old Knappogue Castle is a fantastic single malt that has been made using unpeated barley and was triple distilled at Bushmills distillery. A first period of maturation was done in ex-Bourbon barrels before and final marrying and finishing period in Oloroso Sherry casks. A limited release, this new bottling has more sherry cask influence and is bottled at 43%.
It all started in Austin, Texas in the mid-90s, on the very same land where we sit today. It’s been over twenty-five years, but we still make it in batches, use old-fashioned pot stills, and taste-test every batch to make sure you get only the best.
Master winner at the Irish Whiskey Masters 2023! This is both richer and more complex than the standard twelve year old Knappogue Castle. Named ‘Twin Wood’ because both Bourbon and Sherry cask types have been used for the maturation. It seems that the sherry casks have added to the body and depth and also brought some spice and dried fruit flavours. Like most of the current Knappogue Castle whiskeys this was made using unpeated, triple distilled single malt whiskey from a Northern Irish distillery. Limited numbers were made of this whiskey and it is bottled un-chilfiltered and at 46%.
